So it is not often that I stray into the realms of baking. But when I do I have a few selected go-to recipes and this is my favourite: The Hummingbird bakery traditional chocolate brownies. They are quick, they are easy and they taste totally delicious.
I whipped them up for a homemade afternoon tea recently, in amongst preparing the sandwiches, they are that easy. So here’s how to make the magic happen…
- 200g dark chocolate, roughy chopped
- 175g unsalted butter
- 325g caster sugar
- 130g plain flour
- 3 eggs
- a 33 x 23 x 5cm baking tray, lined with greaseproof paper
Preheat the oven to 170c (325F) Gas mark 3.
Put the chocolate and butter in a heatproof bowl over a saucepan of simmering water (make sure the bottom of the bowl doesn’t touch the water). Leave until melted and smooth.
Remove from the heat. Add sugar and stir until well incorporated. Add the flour and stir until well incorporated. Finally, stir in the eggs and mix until thick and smooth.
Spoon the mixture into the prepared baking try and bake in the over for about 30-35 minutes, or until flaky on the top but still soft in the centre.
Make sure you don’t overcook because otherwise the edges will become hard and crunchy.
Leave to cool and then serve / keep to yourself….
