We spotted today’s recipe sitting pretty on our lovely friend Waverley’s Instagram feed and are delighted that she agreed to share it with us, for all you healthy eating yesers out there! Not only is it clean, low calorie, low carb, and gluten free, we are reliably informed it’s blooming delicious too. Over to Wave to give you the details…

 This lunchbox wonder really hits the spot when you need a quick, easy and scrumptious lunch to pick you up halfway through the work week.

It’s packed full of goodness and with its low carb, and gluten free ingredients it will fit most diets including those trying to eat clean!

It’s especially exciting if, like me, you are on the 5:2 diet as at approx. 270 Calories it’s perfect for a “Fast day”.

Ingredients

30g Quinoa

½ Knorr Veg Stock Cube

150ml Boiling Water (Approx)

30g Light Feta Cheese

2 tbsp Pomegranate seeds

1 tsp Pine Nuts

½ small red onion

Handful of Spinach

Small handful Fresh Parsley

Small handful Fresh Coriander

Small handful Fresh Mint

Lemon Juice – To Taste

Salt and Pepper – To Taste

Method

Cook the Quinoa as per the packet instructions but to liven it up a bit, add the stock cube to the water before bringing to the boil.

Lightly toast the pine nuts in a pan for 2-5 minutes. Careful not to let them burn!

Roughly chop the Red Onion, Spinach, Parsley, Mint and Coriander.

Mix together all the above ingredients with the pomegranate seeds and season to taste.

Crumble over the Feta and then finish with a little drizzle of Lemon Juice.
