When I read about a quick and easy one pot pasta dish on one of my favourite blogs, The Londoner, I thought it was probably too good to be true. Putting all of the ingredients into one pan and coming out with a delicious pasta dish, surely not? But not only has my new blogging idol, Rosie, proved it to be true – I have given it a whirl myself to show you just how easy it is.


I6oz spagetti // 6oz chopped cherry tomatoes // 1/2 an onion, thinly sliced // 1 large clove of garlic, thinly sliced // 2 or 3 sprigs of basil // 2 tablespoons olive oil // 1tsp dried oregano // Sprinkle of chili flakes // Salt n pepper //2 cups of warm vegetable stock (check the ingredients if you’re buying stock & make sure you get one with no monosodium glutamate) // Grated parmesan


Put all your ingredients into a big pan (except the parmesan), break the pasta up if it won’t lie flat.

Pour over your stock.

Cover and bring to the boil. Once it’s boiling, turn the heat down so it gently simmers away, stirring it now and then.

Cook like this for 5mins (I found it took longer than this with dried spaghetti so make sure you keep checking it), then remove the lid alltogether and keep stirring until the water’s all gone.

Then you are ready to go with this bowl of total deliciousness.
